Texture is part of flavor
Milk changes sweetness, temperature, body and aroma release. Well-integrated microfoam makes the beverage feel sweeter and more cohesive without needing excessive added sugar.
Stretch, then texture
Introduce air early and deliberately, then create a rolling vortex that folds bubbles into the liquid. The exact technique depends on steam power, pitcher, volume and milk type.
Temperature control
Excessive heating can reduce sweetness and create cooked flavors. Use a thermometer or validated touch technique, then standardize a service range appropriate to the milk and beverage. Alternative milks often have different stability limits.
Drink-specific texture
A flat white, latte and cappuccino can use different foam depth and integration. Define the house standard in observable terms: target volume expansion, surface gloss, pour behavior and finished cup texture.
Alternative milks
Protein, fat, stabilizers and formulation differ widely. Purging, pitcher choice, starting temperature and aeration may need adjustment. Avoid cross-contact according to your food-safety and allergen procedures.
Steam-wand hygiene
Purge according to equipment SOP, wipe immediately with the designated cloth, and never leave milk baked onto the wand. Do not re-steam previously served milk.
Apply the lesson
Steam three equal milk portions aiming for three textures: thin microfoam, medium latte texture and thicker cappuccino texture. Photograph the surface and record expansion and pour behavior.
