Capstone scenario

You are responsible for launching a new Indonesian coffee as a café feature. The green lot has traceability data, the roaster has produced a pilot profile, the bar team must dial in espresso and filter, and marketing wants a sensory description. Your job is to keep every claim tied to evidence.

Step 1 — Intake

Review origin, producer/lot, process, crop year, green condition and sample cupping. Identify missing information and decide whether any gap blocks production.

Step 2 — Roast

Define the intended beverage use and roast hypothesis. Run a controlled pilot, capture curve/events, roast loss and color where available, then cup after an appropriate rest.

Step 3 — Brew

Create espresso and/or manual-brew baselines. Dial in with measured dose, yield, time, temperature and sensory notes. Record the approved recipe and expected re-check frequency.

Step 4 — Service

Write a customer-facing description that distinguishes fact from sensory interpretation. Define modifications, allergen notes, hot/iced logic and staff recommendation prompts.

Step 5 — QC loop

Define green, roast, brew and service checkpoints. Assign an owner and escalation action to each. A launch is complete only when the team knows how to detect and respond to drift.

Practical completion

After the knowledge check, open the Coffee Lab and complete at least one end-to-end mission. Use your final score and stage feedback to choose the next Academy module for review.

Produce a one-page capstone dossier for a chosen Indonesian origin: traceability facts, roast target, brew recipe, sensory description, service copy, three QC checkpoints and one contingency if the lot changes.
