Learning objectives

What you should be able to do

Build a practical coffee lot traceability chain.
Evaluate suppliers beyond price.
Avoid unsupported sustainability claims.
Plan green inventory and roast production with quality risk in mind.

Traceability chain

At minimum, preserve supplier, origin, producer/cooperative where known, lot ID, crop year, processing, purchase/arrival information, green QC, roast batch and downstream product linkage. Better traceability enables quality investigation and credible storytelling.

Supplier evaluation

Consider sample quality, consistency, transparency, logistics, communication, documentation, availability, price stability and corrective-action behavior. The cheapest lot can become expensive if inconsistency causes waste and remakes.

Sustainability claims

Use specific, supportable claims. “Sustainable coffee” is too broad without evidence. Document certification or program scope where applicable, and distinguish verified facts from brand aspirations.

Inventory aging

Green coffee changes during storage. Track arrival, expected usage, packaging and environmental conditions. First-in-first-out may need to be balanced with lot quality, contract and production planning.

Roastery scheduling

Group production logically while protecting allergen/contamination controls where relevant, profile stability, cooling capacity, destoning/packaging flow and staff workload. Keep batch traceability through packaging.

Business resilience

Avoid single points of failure for critical coffees or packaging. Define approved substitutions and sensory re-validation. Seasonal coffee programs should anticipate crop transitions rather than treating them as emergencies.

Apply the lesson

Build a supplier scorecard with quality, traceability, consistency, logistics, commercial, sustainability evidence and responsiveness. Weight the criteria and explain which failures would block purchase regardless of total score.
