Water is an ingredient and a solvent

Most brewed coffee is water. Its mineral composition affects both extraction and perceived flavor. Extremely low-mineral water may taste thin or extract unpredictably, while unsuitable mineral balance can flatten acidity, create scale, or change how flavor compounds dissolve.

Hardness and alkalinity

Hardness broadly relates to dissolved calcium and magnesium, while alkalinity reflects buffering capacity against acids. For baristas, the practical lesson is that two waters with the same TDS can behave differently. Use a water specification and periodic testing rather than relying on “filtered” as a sufficient description.

Extraction variables

Grind size, particle distribution, dose, beverage yield, water-to-coffee ratio, temperature, agitation, pressure or flow, and contact time all influence extraction. Change one primary variable at a time when diagnosing a recipe.

Under-extraction

Typical symptoms may include sharp sourness, saltiness, thinness, short finish or undeveloped sweetness. Causes can include too coarse a grind, too little contact, channeling, low water temperature or an inappropriate ratio. Sensory diagnosis must be confirmed with workflow evidence.

Over-extraction and harshness

Drying bitterness, astringency and hollow finish may appear when extraction is excessive or uneven. However, bitterness can also come from roast development or coffee selection. Do not assume every bitter cup needs a coarser grind.

Measurement culture

Use scales, timers and—where appropriate—refractometry as tools, not as substitutes for tasting. A technically “in range” beverage can still be undesirable. The target is repeatable sensory quality.

Practical exercise

Apply the lesson

Brew the same coffee three times while changing only grind size. Record brew time, beverage mass, sensory notes and your preferred result. Explain the causal chain you observed.
