What you should be able to do
- Define a sensory target before selecting components.
- Assign base, structure, sweetness, aroma and cost roles.
- Compare pre-roast and post-roast blending tradeoffs.
- Evaluate a blend in its intended beverage context.
Start with a target
Define intended use: straight espresso, milk drinks, filter, bottled coffee or all-round house coffee. Then write target body, sweetness, acidity, aroma, finish and roast direction.
Component roles
One coffee may provide body and chocolate structure, another fruit or floral lift, another sweetness or crema. Components should have a reason to exist. If removing a component does not change the result meaningfully, simplify the blend.
Pre-roast vs post-roast
Pre-roast blending is operationally simple but forces components through one roast curve. Post-roast blending allows component-specific roasting but increases inventory and QC complexity. Choose based on product target and production capability.
Percentage is not the only variable
A 20% component can dominate aroma while contributing little body. Evaluate sensory impact, green cost, roast loss, availability and consistency rather than assuming percentage equals importance.
Blend stability
Seasonal crop changes may require component substitution or ratio adjustment. Define acceptable sensory boundaries and a re-approval process instead of silently changing the formula.
Test in the real drink
A blend that tastes excellent as cupping coffee may disappear in milk or behave poorly as espresso. Evaluate in the intended extraction and service format.
Apply the lesson
Design a three-component Indonesian house blend. Give each component a functional role, choose a percentage, identify the intended beverage, and define three sensory acceptance criteria.
