Describe before judging
“I like it” and “it has citrus acidity with medium body” answer different questions. Professional sensory work separates what is perceived from whether the evaluator prefers it.
A practical tasting sequence
Observe fragrance/aroma, acidity, sweetness, bitterness, body/mouthfeel, flavor descriptors, aftertaste, balance and any taints or faults. Not every form must use the same labels, but the team should use a consistent internal framework.
Reference calibration
Use simple references—sugar solutions, citric/tartaric-style acidity references where appropriate, cocoa, spices, fruits or controlled aroma references—to align language. Calibration is not about forcing everyone to use identical words; it reduces avoidable ambiguity.
Blind and coded samples
Blind tasting reduces expectation bias. Use randomized codes when comparing roast changes, suppliers or recipe adjustments. Reveal identities after notes are recorded.
Defect diagnosis
Astringency may suggest extraction unevenness, roast issues or green-coffee problems. Ferment, phenolic, moldy or baggy notes may originate upstream. Use sensory evidence to trigger investigation, not to assign blame without data.
Cupping records
Record sample ID, date, roast/sample preparation, evaluator, water, grind, ratio, temperature/time where relevant, descriptors, intensity, overall assessment and decision. Lot-level records build institutional memory.
Apply the lesson
Run a blind triangle tasting with two samples the same and one different. Record individual observations before discussion. Compare where the group agreed and where vocabulary diverged.
